Brooklyn Pancakes
Brooklyn pancakes are a great idea if you enjoy eating fresh fruits. They are quite different in their design though. Instead of a flat pancake you get more of a small bowl from the batter. In it you will place various types of fresh cut fruit and some whip cream if you want to. You can eat the fruit out of the bowl and at the same time enjoy the great taste of the Brooklyn pancake bowl it is sitting in. Some people like to sprinkle powdered sugar over the Brooklyn pancake to give it a sweeter taste.
The main difference when it comes to ingredients with Brooklyn pancakes is the flour used. Instead of all purpose flour you will be using bread flour which is very high in protein. You need to use this particular type of flour when you make Brooklyn pancakes or they won’t rise like they need to.
There are small pans that you make Brooklyn pancakes in. Rather than placing them on a griddle on top of the stove you bake them in the oven. You will need to bake each one for about 25 minutes. You want the edges to be golden brown. The center is going to be puffy in bubbled areas instead of smooth. Don’t worry about that because as soon as you remove your Brooklyn pancakes from the oven you will be pushing that center down with the back of a spoon. This is how you will form the bowl to place your fruit in.
Not everyone likes fresh fruit though but you can still enjoy Brooklyn pancakes. You can place other ingredients in them. Some people like a mixture of cinnamon and sugar to place on it. Others fill it with applesauce and then top with cinnamon. Some people even make a dessert out of Brooklyn pancakes. They allow them to cool and then fill with various types of pudding or pie filling. You can top it off with some whipped cream.
Brooklyn pancakes take much longer to make than most other types. This is due to the prep time to place the batter into the baking pans. It is also due to the long baking time for them.
